Vegetable Soup

You'll love eating your veggies in this delicious, healthy, and easy to make soup!

Equipment

  • 1 Large pot
  • 1 Cutting board and knife
  • 1 Immersion blendor or regular blender (optional)

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves diced
  • 2 carrots diced
  • 1 bell pepper diced
  • 1 14oz diced tomatoes
  • 4 cups vegetable broth
  • salt and pepper to taste

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent and the garlic is fragrant, usually about 2-3 minutes.
  • Add the diced carrots, celery, bell pepper, and zucchini to the pot. Sauté for another 5 minutes, stirring occasionally, until the vegetables begin to soften.
  • Pour in the can of diced tomatoes (including the juice) and the vegetable broth. Stir well to combine.
  • Add the dried thyme, dried basil, salt, and pepper to the pot. Stir again to distribute the seasonings evenly.
  • Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the vegetables are tender.
  • Taste the soup and adjust the seasoning if needed. If you prefer a thicker consistency, you can use an immersion blender to puree a portion of the soup, or you can use a regular blender in batches, being careful not to overfill.
  • Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot and enjoy!
