Pour in the can of diced tomatoes (including the juice) and the vegetable broth. Stir well to combine.
Add the dried thyme, dried basil, salt, and pepper to the pot. Stir again to distribute the seasonings evenly.
Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-25 minutes, or until the vegetables are tender.
Taste the soup and adjust the seasoning if needed. If you prefer a thicker consistency, you can use an immersion blender to puree a portion of the soup, or you can use a regular blender in batches, being careful not to overfill.
Ladle the soup into bowls and garnish with freshly chopped parsley. Serve hot and enjoy!
